LOOKIMU THI\OlIHWI!^>IEVE
The food sellers in the markets of Mediterranean towns display their wares under
wire gauze, which allows the air to circulate freely, but keeps at a distance such
things as flies and curious fingers. Would-be purchasers pass along the stalls and
are guided in their choice by the neatness and cleanliness of these cases. Shopping
in this way is known as "Looking through the sieve."
